A yummy carb-heavy dinner tonight:
Whole wheat pasta with sauce:
1/3 diced yellow onion sautéd in extra virgin olive oil
tomato paste
2/3 c Morningstar tofu crumbles
1/2 c edamame
I've been a vegetarian for 14 years & thought if I create a blog, I'll cook more.
LOVE all the protein in there with the carbs!! :-) Great idea to add edamame - I'm sure it added a delightful, fresh crunch!
